There are a lot of options, but for insulation purposes I would probably put in a wood floor. If you just want to seal it, you have to decide what texture you want. You can use a special polyurethane that they use to seal mechanics garage floors, or just your basic foundation sealing paint.
One of the best and most durable ways to seal a concrete floor is with epoxy paint there are several on the market some even have peaces of color you sprinkle on while the paint is still wet that make a very attractive finish.
